Niall Grant 0ffb1a0e51 Update project docs ...

- Removed a PyPi lint check that the README markdown file is parsed
correcrly as the tooling used only reliably supports Python3 at this
time. Given the upload etc to PyPi is a manual step it doesn't make
sense for this check to break the entire build.

- This step can be added back in once the tooling is fixed and we decide
to do automatic deployments to PyPi.
