Maureen Helm 556da6f99d samples: display: Build NXP boards with adafruit_2_8_tft_touch_v2 shield ...

Now that we can use the adafruit_2_8_tft_touch_v2 shield with
mimxrt685_evk_cm33 and frdm_k64f boards, start building the display
driver and lvgl samples for these boards in CI.
