dmlogwrites support for XFS depends on discard zeroing support of
the intended target device. Update the test to use a thin volume and
allow it to run consistently and reliably on XFS.

The dm-log-writes infrastructure is currently implemented to use
SCRATCH_DEV as a hardcoded data device. In preparation to allow use
of specialized devices in certain circumstances, genericize the code
to allow an arbitrary data device. This requires passing the target
device as a parameter to several helper functions from various
tests. No functional changes.

Tests were merged with high seq numbers to avoid conflicts with
other tests. Now renumber them to contiguous numbers, as all other
tests have been merged correctly. This is easier to do than
assigning the final seq numbers at commit time.
